Preheat the oven to 400°F (204°C).
Line an 8-inch round cake pan with parchment paper and set aside.
In a large mixing bowl, combine 120 grams of coconut flour, 24 grams of granulated sweetener (optional), 13 grams of baking powder, 1/4 teaspoon of salt, and 1 teaspoon of xanthan gum. Sift or whisk these together until fully combined and no lumps remain.
Add 3 large room temperature eggs to the dry ingredients and stir until all dry ingredients are moistened.
Add 3/4 cup of melted and cooled butter to the mixture and stir until fully combined and smooth.
Add 3/4 cup of warm milk and stir until everything is fully combined.
Give the dough an extra 20 to 30 seconds of stirring to help the coconut flour absorb moisture and the xanthan gum bind the ingredients together.
Scrape down the sides of the bowl and form the dough into a large smooth ball. Massage the ball for about one minute to help absorb extra moisture.
Let the dough sit at room temperature for about five minutes to help it absorb moisture and settle.
After five minutes, massage the dough again to test the texture. If it's crumbly, add a tiny bit of water until it holds together well.
Divide the dough into nine equal portions, roughly around 1/4 cup each. Roll each portion into a smooth tight ball and place it into the prepared cake pan, ensuring the sides are touching.
In a small bowl, whisk together 1 tablespoon of water and 1 egg until fully combined. Brush a light layer of the egg wash over the top of each roll.
Place the rolls in the preheated oven and bake at 400°F (204°C) for 23 to 25 minutes, or until the tops are lightly browned and a tester comes out clean.
Remove the rolls from the oven and allow them to cool in the pan for at least 15 to 20 minutes before removing them from the pan.
