Homemade Yoghurt

2 L organic milk
yogurt from a previous batch (for culture)

Heat 2 L of organic milk gently to 95° C and hold it there for around 30 minutes.

Cool the milk down to around 50° C.

Mix a little of the warm milk with yogurt from a previous batch.

Pour the mixture into jars or glass containers and wrap them tightly.

Leave the jars undisrupted for 8 hours to set the yogurt.

If a tangier flavor is preferred, leave it wrapped longer.

After 8 hours, place the yogurt in the fridge overnight to fully set and develop flavor.

Strain the yogurt to make it creamier, adding a pinch of salt and letting it sit until the desired consistency is reached.
