Start by preparing the stock with a 3 to 4 lb whole organic chicken and 3 lbs of smoked turkey wings.

Add 3 stalks of celery with leaves, 2 carrots with greens, 1 medium small red onion, 1 turnip, 1 clove of garlic, 2 small stalks of lemongrass, and 1 knob of ginger to a large stock pot.
