Traditionally enjoyed as a late-night snack or quick meal, it embodies the Italian ethos of using fresh, quality ingredients to elevate everyday dishes. Today, variations abound globally, with many adding vegetables or proteins to enhance the dish.

Canola oil is more affordable and has a neutral flavor.
Heat a large fry pan over medium heat.
Add 3 tbsp of extra virgin olive oil to the pan.
Thinly slice 1 shallot and roughly chop 8 cloves of garlic.
Add the garlic and shallot to the hot fry pan and mix continuously for 2 to 3 minutes until the shallot is translucent and the garlic is fragrant.
Add 1 tbsp of all-purpose flour and mix for 1 to 2 minutes to cook off the raw flavor.
Pour in 1/2 cup of dry white wine and add the juice of a fresh lemon.
Add 1 tsp of dried oregano, 1 tsp of dried parsley, and 1/2 tsp of dried thyme, then season with sea salt and black pepper.
Finely grate in lemon zest and mix everything together, then simmer for a few minutes.
After about 3 minutes, add 3 1/2 cups of vegetable broth and bring to a boil.
Add 8 oz of penne pasta to the boiling broth, stirring every 2 to 3 minutes to prevent sticking.
After 8 to 9 minutes, place a lid on the pan and lower the heat to low medium, simmering for another 3 to 4 minutes until the pasta is al dente.
Remove the pan from heat and serve directly from the pan, topped with grated manchego cheese and chopped fresh basil.
