It combines mashed potatoes with cabbage or kale, reflecting the agricultural roots of Ireland. Traditionally served on Halloween, it is believed to bring good luck, with charms hidden within the dish. Today, colcannon is enjoyed year-round, celebrated for its comforting flavors and hearty texture.

Peel and chop the white onions into small pieces and place them in a bowl.
Peel 8 large rooster potatoes and cut them in half, setting them aside.
Remove the outer leaves from the savoy cabbage, slice it thinly, and wash it.
In a large saucepan, layer the chopped onions at the bottom, followed by the sliced cabbage, and then the halved potatoes on top.
Pour water over the layered ingredients and cover with the outer cabbage leaves.
Bring the saucepan to a boil and then simmer for about 30 minutes until the potatoes are soft.
Check the potatoes for tenderness, then remove from heat and drain any excess water.
Cover the potatoes with a lid for about 5 minutes to let them steam.
Add white pepper, salt, butter, and warm milk to the potatoes and mash everything together until smooth.
Serve the colcannon in a dish, creating a small hole in the center to add a coin or ring and a pat of butter.
