Wash and scrub 1 kg of papas criollas thoroughly.

Boil water in a pot and add 4 tablespoons of salt once it reaches a boil.

Add the papas criollas to the boiling water and cook for 10-15 minutes until al dente.

In a large bowl, combine the sautéed onion and garlic mixture with 1 tablespoon of chimichurri, 1 teaspoon of salt, 60 ml of fruit vinegar, chopped green onion, chopped cilantro, and black pepper to taste.
