Chia seeds thicken naturally and are nutrient-rich.
Wash 600 grams of dried apricots in a strainer.
Transfer apricots to a large pot and add 5 cups of water.
Close the lid of the pot and let it soak for at least 3 or 4 hours, or preferably overnight in the fridge.
After soaking, boil the apricots and water on medium heat for about 10 minutes (5 minutes if soaked overnight).
Add 6 cups of sugar, 1 teaspoon of butter, and 1 teaspoon of lemon salt to the pot.
Mix the ingredients and wait for the mixture to boil, skimming off any foam that forms.
Cook the jam on low heat until it thickens, stirring occasionally, for about 30 minutes.
Add the freshly squeezed juice of half a lemon and continue cooking on low heat.
Take a small amount of the jam and place it on a plate, then put it in the deep freezer to check the consistency.
Increase the heat to high to remove any remaining foam, then lower the heat again.
Cook for a total of about 45 minutes, adjusting the time based on desired thickness.
