The addition of sourdough starter enhances the bagels' flavor and texture, making them chewier and more complex. Today, sourdough bagels are celebrated for their artisan quality and are often found in trendy bakeries and cafes.

Commercial yeast provides a quicker rise but lacks the unique flavor of sourdough.
Start by adding 1 cup of warm water to a measuring cup.
Add 3/4 cup of sourdough starter to the warm water.
Mix in 3 tablespoons of sugar and 2 teaspoons of salt.
Put the lid on the mixer to prevent splashing while adding flour.
Add 4 cups of all-purpose flour to the mixture.
Mix the ingredients in the Bosch mixer for about 5 minutes until it forms a heavy dough.
If the dough is too dry, adjust by adding a tablespoon of water or a couple tablespoons of flour as needed.
Shape the dough into bagels immediately or let it rise in a bowl overnight for 8 to 12 hours for better fermentation.
If shaping immediately, let the bagels rise for 1 to 2 hours before boiling and baking them.
Boil the bagels in water before baking them in the oven.
