Smashed Plantain

Peel the ripe plantains and cut them into 1-inch thick slices.
In a large pot, bring water to a boil and add the plantain slices. Boil for about 10 minutes until they are tender.
Drain the plantains and let them cool slightly.
On a flat surface, place a plantain slice and use a flat object (like a plate or a frying pan) to gently smash it until it's about 1/2 inch thick.
In a large skillet, heat the vegetable oil over medium heat.
Once the oil is hot, add the smashed plantains to the skillet in batches, making sure not to overcrowd the pan.
Fry the plantains for about 3-4 minutes on each side until they are golden brown and crispy.
Remove the fried plantains from the skillet and place them on a paper towel to drain excess oil.
Sprinkle the smashed plantains with salt, black pepper, garlic powder, and paprika to taste.
Serve warm as a side dish or snack.
