Smashed Plantain

2 ripe plantains
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vegetable oil
1/2 tsp garlic powder
1/2 tsp paprika
2 scotch bonnet peppers

Peel the ripe plantains and cut them into 1-inch thick slices.

In a large pot, bring water to a boil and add the plantain slices. Boil for about 10 minutes until they are tender.

Drain the plantains and let them cool slightly.

On a flat surface, place a plantain slice and use a flat object (like a plate or a frying pan) to gently smash it until it's about 1/2 inch thick.

In a large skillet, heat the vegetable oil over medium heat.
