Make the marinade by combining 1/2 cup brown sugar, 1/4 cup bourbon, 1/4 cup soy sauce, 1/2 tablespoon Worcestershire sauce, and 1 teaspoon Dijon mustard in a saucepan.
Add 1/4 cup honey to the mixture and heat on medium until it simmers and the sugar melts.
Add 2 tablespoons diced onion, 2 cloves minced garlic, and a small piece of fresh ginger to the marinade and let it simmer for about 1 minute.
Pour the marinade into a bowl and let it cool completely.
Cut 1 pound of steak tips into 1-inch pieces and add them to the cooled marinade, ensuring they are well-coated.
Cover the bowl and refrigerate for at least 1 hour.
Remove steak tips from the refrigerator and let them warm up for 15 minutes before grilling.
Drain off some of the marinade from the steak tips and pour the remaining marinade into a saucepan.
Heat the marinade in the saucepan until it reaches at least 200°F to kill off bacteria, adding 1/2 teaspoon red wine vinegar, a pinch of Dijon mustard, and salt and pepper to taste.
Preheat the grill and place the steak tips on it, flipping every 2 minutes for 10 to 12 minutes until they reach medium doneness.
Remove the steak tips from the grill and pour the heated marinade into cups to use as a dipping sauce.
