1

Roll out the pastry into a rough round shape.

2

Make the hot water pastry for the pie.

3

Prepare the braised pork using pork shoulder and chopped pork leg.

4

Rub oil and salt on the pork shoulder and roast it in the oven until it gets good color.

5

Chop vegetables for the bottom of the tray and add them after the pork has colored.

6

Add white wine and chicken stock to the tray with the pork and vegetables.

7

Add fennel seeds, peppercorns, and apple juice to the braising liquid.

8

Cover the tray with foil and braise the pork in the oven for about 2 hours until tender.

9

Prepare the pie mix by combining 480g plain flour and 1 teaspoon fine salt.

10

Melt 115g butter and whisk it with 230ml hot water to make the dough.

11

Let the dough cool down before using it.

12

Cook the vegetables for the sauce after the pork has been removed from the oven.

13

Reduce the wine and add the chicken stock made from chicken carcasses and pork skin to the sauce.

14

Strain the sauce to remove fat and continue to reduce it.

15

Boil potatoes for mash and then scoop them into a sieve or use a potato ricer.

16

Add a lot of butter to the mashed potatoes.

17

Take the cooked pork out and strain the cooking liquid to use for the sauce.

18

Make a roux with butter and flour to thicken the pork sauce.

19

Whisk the reduced sauce into the roux until smooth.

20

Roll out the pie dough for the base and lid.

21

Fill the pie with the pork mixture and cover with the pie lid.

22
