Mix 1 cup buttermilk with 1/4 cup yogurt and let it sit for 10 minutes.
Sift together 1 cup all-purpose flour, 1 cup cocoa powder, and 1/4 teaspoon baking soda.
In a bowl, whisk together 1 cup sugar and the buttermilk mixture until smooth.
Gradually mix in the dry ingredients until combined.
Pour the batter into a 6-inch cake tin lined with parchment paper and greased with oil.
Bake for 30-35 minutes, checking doneness with a knife or skewer.
Prepare cherry compote by cooking 1 cup cherries with 1 cup sugar and 1/2 lemon until thickened.
Melt dark chocolate using a double boiler method for ganache.
Once the cake is cool, divide it into three layers.
Whip 1.5 cups of very cold whipping cream until stiff peaks form.
Spread whipped cream on the first layer, add cherry compote, and repeat for the next layers.
Cover the entire cake with whipped cream and pour the ganache on top.
Decorate with shaved dark chocolate.
