Start by adding 4 cups of all-purpose flour to a large metal bowl.
Add 1 teaspoon of salt to the flour in the bowl.
In a pot, warm 1 cup plus 2.5 tablespoons of water and 3 tablespoons of butter until the butter melts and the water is warm but not boiling.
Pour the warm water and melted butter into the bowl with flour and salt.
Mix with a spatula until it starts to come together, then dump it out onto the counter.
Knead the dough for about 10-15 minutes until it becomes smoother and more elastic.
Wrap the kneaded dough in plastic wrap and let it rest for 30 minutes.
While the dough is resting, prepare the filling by peeling and cubing the potatoes.
Boil the cubed potatoes in salted water for about 10-15 minutes until soft.
Add 4 tablespoons of butter, salt, pepper, and 1.5 cups of shredded old cheddar cheese to the boiled potatoes.
Mash the potatoes with a potato masher, then finish mixing with an electric hand mixer to fluff them up.
Let the filling cool before assembling the pierogis.
