Turn dial to Sauté and adjust Temperature to 300°F.

Press Timer and adjust to 40 minutes. Press Start. In the Inner Pot, cook and stir bacon until crisp, 5 to 6 minutes.

Use a slotted spoon to transfer bacon to paper towels to drain. Reserve drippings.

In batches, cook potatoes and onion in 2 Tbsp. bacon drippings in the Inner Pot until potatoes are golden brown and tender, about 15 minutes, adding more drippings as needed.

Return all potatoes to the Inner Pot. Stir in bacon; add salt and pepper to taste. Serve immediately.
