Heat a 10-inch non-stick fry pan over medium heat and add 3 tablespoons of extra virgin olive oil (45 ml).

Roughly chop 2 medium-sized onions, finely chop 1 green bell pepper, and roughly chop 4 cloves of garlic.

Add the chopped vegetables into the hot fry pan and mix them around to coat in the olive oil, stirring every minute or so for about 7-8 minutes until the onions are translucent.

Pat 2 cod fillets (7 oz each) dry with paper towels and chop them after the vegetables are sautéed.

Add the chopped cod to the sautéed vegetables and mix until well combined, stirring occasionally.

In a large bowl, crack 6 eggs and whisk them. Add 2 tablespoons of chopped parsley (5 grams), sea salt, and freshly cracked black pepper, and mix well.

After 3-4 minutes, season the cod and vegetable mixture with sea salt and black pepper, then mix again and remove from heat.

Transfer the cod and vegetable mixture into the bowl with the whisked eggs and mix until combined. Let it sit for a few minutes to develop flavors.

Heat the same fry pan over low-medium heat and drizzle in 1 tablespoon of extra virgin olive oil (15 ml).

Pour the egg mixture into the hot fry pan, ensuring it covers the entire surface in a flat layer.

After 4-5 minutes, run a spatula around the edges to ensure the omelet isn't sticking to the pan. Place a plate slightly smaller than the pan over the omelet and flip the pan to transfer the omelet onto the plate.

Slide the omelet back into the pan, scraping up any bits left behind, and gently press down to flatten it. Compact the edges towards the center with the back of the spatula.

Cook for another 4-5 minutes until the eggs are just cooked through, then remove from heat and slide the omelet onto a serving dish.
