Preheat the oven to 350°F (175°C).
Grease a muffin tin with olive oil spray.
In a bowl, whisk together 5 eggs and 1/4 cup milk.
Stir in 1/4 cup crushed feta cheese, 2 tablespoons chopped sundried tomatoes, 2 tablespoons finely diced red onions, and 2 tablespoons kalamata olives.
Add 1/2 teaspoon oregano and 1/4 teaspoon garlic powder or minced garlic to the mixture, along with salt and pepper to taste.
Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
Place the muffin tin in the oven and bake for 18-20 minutes.
Once baked, let the cups sit in the pan for about 5 minutes before removing them.
Serve warm or store for meal prep.
