Stir in minced garlic and cook until fragrant, about 1 minute.
Add diced tomatoes and green peppers; cook until softened, about 5 minutes.
Mix in cooked mung beans and season with salt and black pepper.
Sprinkle in cumin and chopped coriander; stir to combine.
Cook for another 5 minutes to allow flavors to meld.
Remove from heat and drizzle with lemon juice before serving.
