Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and sauté for an additional 1-2 minutes until fragrant.
Add chopped bell pepper, tomato, and carrot, cooking for 3-5 minutes until softened.
Add callaloo to the pot and stir to combine with other vegetables.
Season with thyme, black pepper, and salt, mixing well.
Add a splash of water to help steam the callaloo.
Cover the pot and steam for about 5-7 minutes until the callaloo is wilted and tender.
Remove from heat and stir in lime juice and chopped scallions.
If using, add finely chopped scotch bonnet pepper for heat.
Serve hot as a side dish.
