Empty the saltine crackers into a large Ziploc bag, try to get as much air out as possible, and seal it up.
Crush the saltine crackers using a rolling pin or your hands until they are nice and crushed.
Put the crushed saltines into a bowl and add all the spices (seasoned salt, garlic powder, pepper, paprika) and mix until well combined.
In a separate bowl, crack the eggs and whisk them well.
Add the melted butter to the eggs, ensuring the butter is at room temperature or cooler to avoid cooking the eggs, and mix well.
Preheat the oven to 450°F.
Coat each piece of chicken in flour, then dip it into the egg and butter mixture, allowing excess to drip off.
Coat the chicken in the crumb mixture, pressing down to ensure the crumbs stick, and place it onto a baking rack or baking sheet.
Repeat the coating process with the remaining pieces of chicken.
Place the baking sheet in the oven and bake at 450°F until the chicken is fully cooked and registers at 165°F internally, usually taking 15 to 20 minutes depending on the size of the chicken.
Remove from the oven and serve immediately, optionally with a honey mustard dipping sauce or any dip of your choice.
