Korean Short Ribs

3 pounds bone-in short ribs
1/3 cup soy sauce
1/3 cup brown sugar
1 tablespoon sesame oil
1/3 cup rice wine
1/4 teaspoon cayenne pepper
2 teaspoons black pepper
1 Asian pear
8 cloves fresh garlic
1 medium onion
1 inch raw ginger or 1 tablespoon ginger paste
1/4 cup water
2 teaspoons sesame seeds

Make the marinade by mixing 1/3 cup soy sauce, 1/3 cup brown sugar, 1 tablespoon sesame oil, 1/3 cup rice wine, 1/4 teaspoon cayenne pepper, and 2 teaspoons black pepper in a bowl.

Quarter and core an Asian pear, then add it to a metal mixing bowl with 8 cloves of fresh garlic, 1 medium onion, and 1 inch of raw ginger or 1 tablespoon of ginger paste.

Blend the pear mixture with an immersion blender until it forms a paste.

Add 1/4 cup of water to the paste and mix in the soy sauce mixture and 2 teaspoons of sesame seeds.

Coat 3 pounds of bone-in short ribs in the marinade and let them sit for 2 hours to overnight.

Preheat the broiler and prepare a standard cookie sheet with duck fat spray.

Broil the short ribs for about 3 minutes on each side.

Let the meat rest, then sprinkle with sesame seeds before serving.

Serve the short ribs as is or cut off the bone, slice into pieces, and serve in lettuce wraps with hot Thai chili pepper.
