Cut red potatoes into small cubes, about 1 to 2 cm each.
Add potatoes to a frying pan with 1 teaspoon of olive oil and sprinkle with fresh rosemary.
Cover the pan and cook on the hob for 20 minutes until the potatoes are cooked.
Chop sausages into 1 cm pieces and transfer to a different frying pan without adding oil.
Chop red onion into small pieces and add to the frying pan with the sausages.
Slice mushrooms and add them to the pan with the sausages and onion, increasing the heat to cook properly.
Add a teaspoon of paprika to 9 eggs and whisk together with a hand whisk.
Add grated cheddar cheese to the egg mixture, reserving some for later.
Prepare pickled peppers by drying them on paper to remove excess liquid, then cut into long chunks.
Check on the potatoes after 10 minutes; they should be browning nicely.
Add a couple of handfuls of spinach to the frying pan with the sausages and mushrooms, stirring occasionally.
Transfer the cooked sausage, mushroom, and spinach mixture to a bowl and let it cool for about 10 minutes.
Once cooled, mix the sausage mixture with the egg mixture, adding salt and pepper to taste.
Use a baking tin lined with baking paper and add a little oil to the bottom.
Pour the egg and vegetable mixture into the baking tin, distributing evenly.
Halve some tomatoes and place them on top for presentation, pushing them in slightly.
Add parsley to taste on top of the mixture before baking.
Preheat the oven to 200°C and bake for 25-40 minutes, checking with a skewer for doneness.
