Heat a standard stainless-steel pan over medium to slightly lower heat.
Add 1/2 teaspoon oil to the hot pan and spread it evenly.
Add 5–10g of butter to the pan and let it melt without browning.
In a bowl, crack 2 large eggs and mix gently without whipping, imagining cutting the elasticity of the egg whites.
Use a strainer to remove any egg white clumps for a smoother texture.
Add a pinch of salt to the eggs before cooking to ensure even seasoning.
Once the butter has melted, pour the egg mixture into the pan before it starts to brown.
Move the eggs quickly in a circular motion to gather the cooked parts toward the center.
When the edges are set and the center is still runny, stop stirring and start shaping the omelet.
Lightly trim the edges of the omelet to clean up the shape, then fold it gently from front to back using a rubber spatula.
Tilt the pan slightly to make flipping easier, tapping the handle lightly to let the omelet move naturally.
Once the far edge sets, flip the omelet toward you with the spatula, adjusting the shape as needed.
Cook for a few seconds more, then flip again and finish seam-side up.
