To make the sauce, combine mirin and sake in a pot and heat over medium heat.
Bring to a boil to evaporate the alcohol.
Turn off the heat and add sanontou, stirring until dissolved.
Add soy sauce and tamari soy sauce.
For the teriyaki fish, dust the fish with flour.
Heat oil in a frying pan and cook the fish over medium heat.
Once the fat renders, wipe it off with a paper towel.
Reduce heat to low and coat the fish with the sauce.
For the yakitori, season the chicken with salt and pepper.
Heat oil in a frying pan and cook the chicken until browned over medium heat.
Cover and cook for 5-7 minutes over low heat.
Reduce the sauce.
