Preheat the oven to 300-325°F on the convection setting.
In a casserole dish, spread out 3 to 4 lbs of cubed ham pieces evenly.
In a bowl, mix together 1 cup of barbecue sauce, 1/3 cup of brown sugar, 1/4 cup of honey, and 1 to 2 tablespoons of bacon fat until well combined.
Slice 3 jalapenos and add them to the glaze mixture. Adjust the amount based on desired spice level.
Slice and prepare 1 purple onion, adding it to the glaze mixture as well.
Add a couple tablespoons of pineapple juice to the glaze mixture and stir to combine.
Pour the glaze over the ham in the casserole dish and toss to coat.
Cover the dish and place it in the oven for 2 to 3 hours, stirring every 30 minutes to ensure even cooking and caramelization.
After about 2.5 to 3 hours, check the ham; it should have released liquid and the glaze should be thickening.
Once finished, skewer 3 pieces of ham onto each skewer for serving.
Garnish with chopped green onion before serving.
