Add whole chicken, bay leaves, scallions, and onion to a pot, cover with water, and simmer for 90 minutes.

Remove chicken and take meat off the bones, separating white meat from dark meat.

Return bones and skin to the pot and cook for an additional 30 minutes, skimming off fat and straining the stock.

Add 1 teaspoon salt, 5 grams guascas, 3 or 4 sprigs of cilantro, and 1 pound of yellow potatoes to boiling stock and cook until very tender.

Remove cilantro and discard, then remove potatoes from the pot, mash them, and return to the pot.

Add 3 ears of corn cut into 6 pieces and 1 pound of peeled and diced russet potatoes, cooking until tender.

Add the shredded chicken (traditional only the breast meat is used) and heat through.
