300g pasta with pinch of salt
250g chicken
1 small finely chopped onion
1/2 red capsicum finely chopped
1 tablespoon cajun
1 teaspoon smoked paprika
2 teaspoon red chilli flakes
1 teaspoon black pepper
2 teaspoon salt or to taste
1 teaspoon dry mixed herbs
5 garlic cloves
500g passata
1 and a half cup pasta water
3/4 cup double cream
Fresh parsley
Fresh mozzarella
Cherry tomatoes halved

Boil pasta with a good pinch of salt until al dente

Heat olive oil on a pan

When oil is hot, on medium heat add onions and sauté

Add garlic after two mins

Mix the spices in and stir frequently for about one minute

Add chicken and combine altogether

After two minutes cover with lid on low heat for five mins

Uncover and give it a mix

Add the passata and mix well

Bring the passata to a boil then add pasta water

Bring the sauce to a boil again frequently stirring

Add the double cream

Stir and mix everything well

Cook for around two minutes and when you've got a nice sauce, add the pasta

Mix the pasta in then cover with lid on low heat for two minutes

Uncover then garnish with fresh parsley

Transfer pasta to a baking dish

Sprinkle dry mixed herbs on top

Bake on 200c for around 30 mins
