1 kg tomatoes
Salt to taste
2 tbsp finely chopped garlic
3 tbsp extra virgin olive oil
2 tbsp dried pasta herb mix (Oregano, Rosemary, Thyme)
1 tbsp chilli flakes
1/2 tsp black pepper powder
2 cups chopped spinach
2-3 fresh basil leaves, finely chopped
500g boneless chicken thighs, cut into equal sized strips pieces
1 tsp salt
1/4 tsp black pepper powder
250 g pasta of choice, cooked will al dente
200 - 300g grated cheese (blend of Mozarella and Cheddar. can also add Parmesan)
Basil leaves for garnish

Season the chicken pieces with salt, dried mix herbs and black pepper powder. Mix well and set aside.

Heat oil in a pan and add the marinated chicken. Cook till the chicken is 80% cooked. Set aside for later.

Heat a large pot with water. Once it comes to a boil, add the tomatoes and cook till slits start to appear on the skin of the tomatoes.

Transfer the tomatoes immediately to ice cold water and let it cool.

Peel the tomato skin off and grind all the tomatoes into a fine puree.

Heat oil in a pan. Add garlic and saute till aromatic. Pour the puree and cook till it starts to boil.

Season with salt, black pepper powder, and mixed dried herbs. Mix well.

Once the sauce is thick, add the chicken and cook well. Cover and let it cook on low heat till chicken is tender.

Add some spinach and fresh basil. Mix well.

Add the al dente pasta to the tomato and chicken mix. I have used macaroni but you can use any pasta of your choice.

Give it one last mix and turn the flame off.

Transfer the pasta and chicken to a baking dish. Garnish with grated cheese.

Bake in the oven at 180 degree celsius for 30 minutes. Enjoy hot!
