Take slightly lukewarm water and add yeast to it, letting it activate.
Measure out flour, sugar, olive oil, and salt into one bowl.
After the yeast has activated, add it to the bowl with flour, sugar, olive oil, and salt.
Knead the mixture for about 1 minute.
Cover the dough and let it rest for 5 minutes to allow the flour to hydrate.
Knead the dough for a further 10 minutes.
Let the dough rest for another 20 minutes.
Portion the dough into 250 g pieces, shaping them into balls.
Lay the dough balls out in trays and let them rest for about 6 hours.
Stretch the dough using the slap and stretch technique, pressing out the dough ball without touching the edges.
Transfer the stretched dough to a well-floured pizza peel or the back of a cookie tray.
Prepare all pizza toppings and sauce before unrolling the dough.
Preheat the oven to its highest setting, around 500 or 550 degrees Fahrenheit, for 30 to 45 minutes.
Assemble the pizza quickly to prevent the dough from getting mushy.
Once baked, transfer the pizza to a wooden cutting board and let it sit for about 1 minute before slicing.
