Preheat the oven to 375°F.
Place cherry tomatoes and chopped garlic into a baking dish.
Drizzle with olive oil, add salt to taste, chili flakes, and oregano.
Unwrap the Boursin garlic cheese and place it in the center of the dish surrounded by the other ingredients.
Add sundried tomatoes to the dish.
Bake in the oven for about 25 to 30 minutes.
While the dish bakes, heat water in a large pot until boiling.
Generously salt the boiling water and add some oil.
Add your favorite pasta to the boiling water and cook according to package instructions.
Once the pasta is done, drain it and keep it aside.
In a skillet, heat olive oil over medium heat.
Add chopped shallots and garlic to the skillet and sauté for about 2 to 3 minutes until translucent and slightly brown.
Add mushrooms to the skillet and sauté for another 3 to 4 minutes until they release their liquid and start to turn slightly golden.
Add heavy cream and fresh spinach to the skillet, cover with a lid, and allow the spinach to wilt for about a minute.
Remove the baked cheese and tomatoes from the oven and mash them with a fork until it forms a chunky sauce.
Mix the mashed cheese and tomatoes well.
Pour the prepared cheese sauce into the skillet with the sautéed vegetables and mix well.
Add the cooked pasta to the skillet and toss to combine.
Check for seasoning and adjust if necessary.
Turn off the stove and garnish with fresh basil leaves.
Serve immediately.
