1

Wash and chop 2 bunches of swiss chard.

2

Wash 2 cups of Spanish pardina lentils.

3

Add 6 cups of water to the lentils and cook covered or uncovered for 15 to 20 minutes until halfway done.

4

Remove all the foam on top of the lentils halfway through cooking.

5

Roughly chop 10 cloves of garlic and thinly slice 1 small onion.

6

Add 2 tablespoons of flour to the onion and garlic and mix very well; set aside.

7

Check on the lentils; they should have absorbed a lot of liquid and be about 80 percent done.

8

Add 1 heaping tablespoon of cumin and 3 cups of water to the lentils and mix well.

9

Add 2 tablespoons of extra virgin olive oil and bring to a boil.

10

Add the whole amount of swiss chard to the pot; it may look like a lot but will wilt down.

11

Add 1 tablespoon of salt and 3 more cups of water.

12

Add the onion and garlic flour mixture to the pot and mix very well until all the flour is incorporated.

13

Keep mixing and let it come to a boil; then reduce heat to medium to medium-low.

14

Cook for 15-20 minutes until the onions are cooked down and the swiss chard is wilted.

15

Add a squeeze of lemon before serving.
