Rinse spinach thoroughly under running water and remove excessive water.
Remove the edges of the spinach and chop it.
Cube the onion into medium-sized pieces.
Smash and dice garlic cloves into small pieces.
Add 2 tablespoons of vegetable oil to a skillet and heat it.
Add the cubed onion to the skillet and sauté until caramelized, about 4 minutes.
Add the diced garlic to the skillet and sauté until it starts turning brown.
Add the chopped spinach to the skillet and cook for about 3-4 minutes until tender, allowing it to absorb flavors from the onion and garlic.
Remove the cooked spinach and place it in a strainer, reserving the liquid for later use.
In a mixing bowl, combine the cooked spinach with 1 cup of mozzarella cheese and 2 eggs, mixing well.
Prepare a sauce by blending 4 Roma tomatoes with the reserved spinach liquid, 1 tablespoon of black pepper, and salt to taste until smooth.
In the skillet, add 2 tablespoons of vegetable oil and spoon in the spinach mixture to form patties.
Cook the patties until golden brown on both sides, then remove and plate them.
In the same skillet, add the blended tomato sauce and cook for about 5 minutes on medium heat until it thickens.
Taste the sauce and adjust salt if necessary.
Serve the patties with the sauce on top or on the side.
