Add 2 tablespoons fresh chopped parsley, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, 1 teaspoon salt, and 1 tablespoon softened butter to the mashed potatoes.
Mix all ingredients together until well incorporated and cover the bowl with plastic wrap.
Place the bowl in the fridge for about 30 minutes.
Cut mozzarella cheese sticks into 4 equal pieces.
Use a large ice cream scoop to scoop the mashed potato mixture into your hand and flatten it.
Place one piece of mozzarella cheese stick in the center and wrap the potato mixture around the cheese, shaping it into a cylinder.
Place the shaped potato sticks on a large tray and repeat until all mixture is used.
Coat the potato sticks in flour, then dip in beaten eggs, and finally coat with crunchy panko bread crumbs.
Heat a large frying pan over medium heat with vegetable oil until hot.
Gently place the stuffed mashed potato sticks in the pan and fry for about 3 minutes or until golden brown, turning them constantly for even cooking.
Remove the fried sticks from the pan and transfer them to a wire rack to drain and cool.
Fry in small batches to maintain oil temperature and prevent sogginess.
Let the sticks drain from excess oil and cool slightly before serving.
Transfer to a serving plate and serve with your choice of dipping sauce, such as homemade marinara or avocado ranch sauce.
