Mediterranean Rice Bowl

1 butternut squash
1-2 white onions (optional)
Chickpeas
1 tsp cumin
1 tsp sweet or smoked paprika
1 tsp turmeric
1 tsp salt
1 tsp pepper
3 tablespoons extra virgin olive oil
½ cup rice per serving
Toppings: cherry tomatoes, chickpeas, cucumber, grated carrots, seeds, nuts, vegan feta
Salad greens (lettuce, kale, or raw spinach leaves)
Dressing: olive oil, balsamic vinegar, mustard, salt, pepper

Preheat oven to 306°F/180°C.

Chop your roasting veggies of choice into 1-inch pieces.

Add to a large baking tray and apply seasoning with a few tablespoons of extra virgin olive oil. Mix well by hand and then add to the oven.

Bake for around an hour, turning the veggies halfway through.

For rice cooker method: Add the desired amount of rice and water with the ratio specified in the rice cooker instructions. Switch on the rice cooker and wait till it finishes and turns off (around 25-35 minutes).

For microwave method: Rinse rice in fresh water, then add to a microwave-safe bowl with enough water to cover the rice by ¾ inch. Microwave for 5 minutes, stir, microwave again for 5 minutes, stir, then heat for 2 more minutes and let cool for 5 minutes.

Prepare toppings and dressing: This recipe works great with seasonal greens, cherry tomatoes, and chickpeas or hummus. Garnish with pomegranate seeds, cashews, almonds, or seeds of your choice. Combine dressing ingredients in a jar, shake to mix.

Once rice is ready, add a bed of rice to your bowl (around 6 heaped tablespoons).

Add your choice of roasted veggies.

Add your toppings of choice.

Add a good splash of your dressing and serve.
