Honey Butter Potato Wreath

Thinly slice peeled potatoes, enough to snugly fit into a springform tin to make a wreath shape.
Drizzle with butter, season, stud with star anise and bake for 1 hour at 180°C, basting with honey and butter every 10 minutes until crispy and gold.
Cool slightly before inverting on a plate to serve.

Add garlic and lemon slices, followed by a handful of asparagus tips.
Sizzle for 2 minutes then add a handful of sugar snap peas.
Sizzle for 1 minute then add a handful of sliced baby marrows.
Sizzle for another minute. Remove from the heat, sprinkle with fennel curls and serve warm with the salmon.
