Japanese Tanmen Bacon Noodle Soup

Rice vinegar + sugar mimics the sweetness of mirin, while white wine vinegar is often cheaper.
Soak 3 dried wood ear mushrooms in hot water for 15 minutes. If not available, you can omit them. Cut the mushrooms into small pieces. Slice the onion into julienne. Thinly slice the carrot. Cut the cabbage into bite-sized pieces.
In a pan, sauté 60g of pork with 1 tablespoon of sesame oil. Add all the vegetables and season with salt and pepper.
Add 1 tablespoon of sake, 1 tablespoon of chicken broth powder, 4 cups of water, and 1/2 teaspoon of salt. Cook for about 10 minutes over medium heat.
In a pot, cook the noodles for 2 minutes. It is important to drain the noodles well so that the soup does not dilute.
Serve in a bowl in the order of noodles, soup, and finally the vegetables as toppings.
