Preheat oven to 375°F (190°C).
Cook breakfast sausage in a skillet over medium heat until browned, about 5-7 minutes.
Drain excess fat from the sausage and let cool slightly.
Unroll crescent roll dough on a clean surface and separate into triangles.
Spread a thin layer of mustard on each triangle.
Sprinkle garlic powder and onion powder evenly over the mustard.
Place a spoonful of cooked sausage on the wide end of each triangle.
Add a small amount of shredded cheese on top of the sausage.
Roll the dough around the filling, starting from the wide end to the point.
Place the roll-ups on a baking sheet lined with parchment paper.
Beat an egg in a small bowl and brush it over the tops of the roll-ups.
Sprinkle crushed Chex cereal over the top for added crunch.
Bake in the preheated oven until golden brown, about 12-15 minutes.
Remove from oven and let cool slightly before serving.
