Add 1 and 1/3 cup water, bring to a boil, then reduce to a simmer and cover for 11 minutes.

After 11 minutes, add 1 pound of sliced asparagus and 1/2 cup of peas on top of the quinoa mixture.

Add the zest of 1 lemon and steam the vegetables for about 4 minutes until tender.

Let the mixture stand for 10 minutes after cooking.

Chop the chicken breast and fluff the quinoa mixture with the steamed vegetables.
