Vodka Sauce Pasta

Cultural Context

Vodka Sauce Pasta, a staple of Italian-American cuisine, combines the richness of cream and the acidity of tomatoes with a splash of vodka, creating a unique and flavorful sauce. Traditionally served over pasta, this dish became popular in the 1980s and is often associated with Italian restaurants in the United States. Today, variations abound, with some adding proteins like chicken or shrimp, making it a versatile favorite for home cooks.

1

Peel and dice 2 medium-sized onions.

2

Peel 4 cloves of garlic and set aside a garlic crusher.

3

Grate 4 oz of Parmesan cheese using the finest box grater setting.

4

Fill a large pot with water, add a fistful of salt, and turn on the heat.

5

In a large crock pot, add 2 tablespoons of extra virgin olive oil and heat on medium-high.

6

Add the diced onions to the pot and stir constantly for about 5-7 minutes.

7

After 2 minutes, add the crushed garlic to the onions to avoid burning.

8

If needed, add more olive oil to prevent sticking.

9

Once the onions are translucent, add 1 pound of radiatori pasta to the boiling water and cook for 9 minutes, stirring occasionally.

10

Add 1 tube of concentrated tomato paste or tomato ketchup to the onion and garlic mixture.

11

Add 1 teaspoon of red chili flakes and cook until the sauce turns a deep red color, about 5-7 minutes.

12

Once the sauce thickens and sticks to the bottom, deglaze with vodka (be cautious of flames).

13

Add 3/4 cup of heavy cream and the reserved pasta water to the sauce and mix until smooth.

14

Add the cooked pasta to the sauce and mix well, reserving some cheese for garnish.

15

Taste and adjust seasoning with salt if needed.

16

Serve the pasta with additional Parmesan cheese and basil on top.
