Preheat the oven to 325°F (163°C).
Place the spiral ham on a wire rack in a roasting pan.
Add apple cider to the bottom of the pan for moisture.
Sprinkle cinnamon at the bottom of the pan.
Add chopped Gala apples and optional red onions to the bottom of the pan.
Cover the ham tightly with aluminum foil.
Bake the ham for 10 minutes per pound; for an 8 lb ham, bake for about 1 hour and 15 minutes until it reaches an internal temperature of 110°F (43°C).
Prepare the glaze by melting butter in a pot over medium heat.
Add finely chopped Gala apples to the pot and mix with the butter.
Add brown sugar and mix until combined, cooking for about 5 minutes until it looks cooked down.
Stir in maple syrup, Dijon honey mustard, and a splash of rum extract.
Add ground ginger, ground cloves, white pepper, and pink salt to the mixture.
Pour in apple cider and whisk everything together.
Let the glaze come to a boil, then reduce the heat to low and simmer for 6-7 minutes until thickened.
Once the ham reaches 110°F, remove it from the oven and baste it with the glaze, trying to get it in between the slices.
Return the ham to the oven uncovered for about 10 minutes after basting.
Remove the ham again and baste it two more times, a total of three times, allowing the glaze to set each time.
Check the internal temperature of the ham; it should reach 145°F (63°C) before serving.
