Start with 2 ribeye steaks and dry them off well.
Season the steaks with salt and black pepper on both sides.
Drizzle avocado oil on the steaks, ensuring they are well coated.
Preheat a cast iron pan on the grill until hot; test by splashing water in the pan.
Place the steaks in the hot pan, turning them every minute and a half for even cooking.
Use an instant-read thermometer to check the temperature; aim for about 127-128°F for doneness.
Remove the smaller steak when it reaches the desired temperature and let it rest.
Continue cooking the larger steak until it reaches the desired temperature, then remove it and let it rest as well.
In the same pan, lower the heat and add a splash more avocado oil and 1 small diced yellow onion; let it soften for a couple of minutes.
Add 1/3 cup of vermouth to deglaze the pan, scraping up the fond.
Once most of the liquid has evaporated, add 1/2 cup of heavy cream and 3-4 tablespoons of honey mustard, stirring to combine.
Add a splash of apple cider vinegar, a pinch of kosher salt, and a pinch of black pepper; mix well.
Let the sauce simmer until it thickens, then remove from heat.
