Prepare a 26cm diameter baking form with a tube by greasing it with cold butter.

Crack 6 eggs and separate the yolks from the whites, then add 2 extra egg whites.

Mix egg yolks with a mixer and add 1/3 of the sugar, beating until foamy and pale.

Add room temperature butter to the egg yolk mixture and beat until incorporated.

Mix in 1 tbsp lemon zest, 1 tsp orange zest, marzipan, a tiny pinch of cardamom, and a pinch of salt, then beat until smooth.

Set aside the egg yolk mixture and beat the egg whites until foamy, then add the remaining sugar and beat until smooth with hard peaks.

Fold a small portion of egg whites into the egg yolk mixture, then sift in the flour and mix with a spatula until smooth.

Add more egg whites to the mixture, mixing well, then add corn starch and repeat the process until all egg whites are incorporated, resulting in a fluffy batter.

Scoop a thin layer of batter into the baking tin and bake at 240°C for 3-4 minutes until cooked but not brown.

Repeat layering with the remaining batter, baking each layer for 3-4 minutes until 8-9 layers are formed.

Once all layers are baked, let the cake cool completely in the tin.

Warm 4 tbsp of plum jam in the microwave or a small saucepan and brush it on the surface of the cooled cake.

Mix powdered sugar into marzipan and roll it out to a round shape, then cut it to fit the cake.

Lay the marzipan on top of the cake and cut out the middle.

Decorate with pistachio nuts and create a Groot figure using marzipan and food coloring, shaping it to resemble a tree.
