Over low heat, put sugar in a pie pan and stir for 5 to 10 minutes until melted and close to burning.
Add coconut cream to the melted sugar to form a caramel layer, then mix in shredded coconut to create the filling.
In a bowl, add yeast, sugar, and warm water, mix together, and let sit for 10 minutes until foamy.
Add 1/8 cup of oil and the egg to the yeast mixture and mix well.
Gradually add 3 cups of self-raising flour, mixing until ready to knead, then knead the dough on a floured surface.
Cover the dough with a tea towel and let it rise in a warm place for 15 minutes.
Form the dough into balls about 4 to 5 centimeters in diameter.
Scoop a tablespoon of coconut filling into each dough ball, fold over, and roll to seal.
Heat 800 mL of oil in a wok over low heat for 5 minutes.
Deep-fry the buns in the hot oil for about 5 minutes, turning until they are dark brown.
