Deconstructed Faux Sushi Bowls

1 cup sushi rice
1 1/4 cups water
1/4 cup rice vinegar
2 tbsp sugar
1/2 tsp salt
1 avocado, sliced
1 cucumber, julienned
1 carrot, shredded
1/2 cup edamame, shelled
1/4 cup pickled ginger
2 sheets nori, cut into strips
2 tbsp sesame seeds
soy sauce, for serving

Rinse the sushi rice under cold water until the water runs clear.

In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed.

Remove from heat and let the rice sit, covered, for 10 minutes.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool to room temperature.

In serving bowls, layer the sushi rice as the base.

Top the rice with sliced avocado, julienned cucumber, shredded carrot, and shelled edamame.

Add pickled ginger and nori strips on top of the vegetables.

Sprinkle sesame seeds over the bowls for added flavor and texture.
