Crispy Baked Potato Skins with Cheez Sauce

4 large russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions

Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes thoroughly, then dry them with a towel.

Prick each potato several times with a fork, then rub them with olive oil, salt, and pepper.

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

Remove the potatoes from the oven and let them cool for about 10 minutes.

Once cool enough to handle, cut each potato in half lengthwise and scoop out most of the flesh, leaving a thin layer of potato inside the skin.

Brush the insides of the potato skins with olive oil and sprinkle with garlic powder and onion powder.

Return the potato skins to the oven and bake for an additional 10-15 minutes, or until crispy.

While the skins are baking, prepare the cheez sauce by melting the cheddar cheese in a saucepan over low heat, stirring until smooth.

Once the skins are crispy, remove them from the oven and fill each with the cheez sauce. Top with sour cream and chopped green onions before serving.
