Cook the vegetables until golden on one side, then flip and cook the other side.
Cook the vegetables according to preference, ensuring the eggplant is cooked to avoid bitterness and the onions are golden brown.
For the dressing, add sun-dried tomatoes, basil, olive oil, garlic, salt, and pepper into a blender and blend for a minute.
Let the mixture sit for 5 minutes to allow the sun-dried tomatoes to rehydrate, then blend again until creamy.
If the dressing is too thick, add more water and blend again.
Taste and adjust the dressing with more lemon juice or vegan parmesan if desired.
Spread the dressing on both slices of bread.
Layer the grilled vegetables and tofu on one slice of bread, adding crunchy lettuce if desired.
Top with the other slice of bread and slice the sandwich in half.
Grill the sandwich on the grill pan for a little bit to add grill marks if desired.
