Cut off the top of a bulb of garlic, sprinkle with olive oil, wrap in foil, and roast until soft.
Squeeze the roasted garlic out of the peel and chop it into smaller pieces.
In a mixing bowl, combine all-purpose flour, whole wheat flour, vital wheat gluten, salt, sugar, and yeast.
Add fresh rosemary and the chopped roasted garlic to the dry ingredients.
Pour in warm water (around 106°F) and mix until a shaggy dough forms.
Cover the bowl with a warm towel and let the dough rise for about 1 hour in a warm place or using the oven's proofing feature.
Scrape the risen dough onto a floured piece of parchment paper.
Flour your hands and fold the dough into a round shape by dragging the sides into the center.
Flip the dough over to create a smooth top and tuck in the bottoms.
Flour the top of the dough and cover it to rise until the oven reaches temperature.
Preheat the oven and place a cast iron pan inside to heat up.
Once the oven is hot, score the top of the dough and carefully place it into the hot Dutch oven.
Cover and bake the bread, checking for a golden brown crust.
