Start by rinsing the 14 ounces of black beans and checking for any stones.

In a pressure cooker, add the rinsed black beans and for every cup of beans, add 3 cups of water. Since I have 14 ounces, I added about 6 cups of water.

Seal the pressure cooker and cook the beans for 35 minutes.

While the beans are cooking, prepare the sofrito. Heat 2 to 3 tablespoons of olive oil in a skillet.

Add the chopped onion to the skillet and sauté until translucent.

Add the minced garlic, cumin, and bay leaves to the skillet and sauté for a few more minutes.

Once the sofrito is ready, add it to the cooked black beans in the pressure cooker.

Add 2 teaspoons of sugar and salt to taste to the beans and stir well.

Let the mixture cook for an additional 5 minutes to meld the flavors.
