Rinse the pinto beans with water to clean them.
Add 2.5 cups of pinto beans to a large pot.
Pour in 7 cups of water to the pot.
Add the whole brown onion to the pot without chopping it.
Bring the pot to a boil on high heat.
Once boiling, lower the heat to a slow simmer and cover the pot.
Cook the beans for 2.5 hours on low heat, stirring occasionally.
After 2.5 hours, check if the beans are soft and tender.
Remove the onion from the pot.
In a separate skillet, heat 3 tablespoons of oil over medium heat.
Add a tablespoon of chopped onion to the skillet and sauté until browned.
Add the cooked beans to the skillet and let them boil.
Smash the beans with a bean masher until desired consistency is reached.
If desired, add cheese to the beans and let it melt before serving.
