Place a blend of colby jack and cheddar cheese on one end of each flattened bread slice.

Roll the bread tightly around the cheese, securing it at the end.

If needed, use a toothpick to hold the roll-up together.

Heat a skillet over medium-low heat (around 325°F).

Add a knob of butter to the skillet and let it melt.

Place the roll-ups seam side down in the skillet.

Baste the tops of the roll-ups with melted butter.

Cook until golden brown, checking to ensure the cheese melts inside.

Remove from skillet and serve, optionally cutting them in half.
