- 3Drizzle the olive oil over the vegetables and sprinkle with oregano, basil, salt, and pepper. Toss to coat evenly.
- 4Place the chicken breasts in a baking dish and surround them with the seasoned vegetables.
- 5Drizzle a little more olive oil over the chicken and season with additional salt and pepper if desired.
- 6Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- 7If using, sprinkle feta cheese over the chicken and vegetables during the last 5 minutes of baking.
